Pumpkin Muffins



Most times when Halloween night falls on a weekday, we sit out on the porch. We sip on hot chocolate and eat yummy treats while passing out candy to the trick or treaters. This recipe for pumpkin muffins is as simple as it gets. It only has 2 ingredients and is ready in less than 30 minutes. You can change up the flavor by using any cake mix you have on hand. Whether it be vanilla, spice, or even chocolate! Yum!

Ingredients:


*Betty Crocker Vanilla Cake Mix
*15 oz. Can of Pure Pumpkin


Tools Used:

*Muffin/Cupcake Pan
*Cupcake Liners
*Stand Mixer
*Spatula
*Can Opener
*Cooling Rack


Directions:

*Pre-Heat oven to 350°
*Mix Cake Mix & Pumpkin together with mixer, until thick batter forms
*Line cupcake/muffin pan with liners or spray with non-stick spray
*Using ice cream scoop, fill each liner 3/4 full
*Bake for 20-25 minutes or until golden brown
*Allow to cool completely on cooling rack before frosting
